Spanish Style Mash
PREP TIME: 10 min
COOKING TIME: 15 min
1.5kg Spud Lite potatoes, peeled and cut into 2cm chunks
¾ cup aioli
1 chorizo sausage, finely diced
¼ cup pickled capers, drained
¼ cup flat leaf parsley, roughly chopped
Salt flakes and freshly ground black pepper
Steam potatoes for 15 minutes or until very tender. Remove from heat, drain saucepan and return potatoes, mashing until smooth. Add aioli, salt and pepper, stirring until combined.
Meanwhile, place chorizo in non-stick frying pan over a medium heat, stirring occasionally until lightly golden. Add capers to pan and fry for 1-2 minutes until crispy. Add half the chorizo mixture and parsley to the mash, stirring to combine.
To serve, spoon mash into a serving bowl and sprinkle remaining chorizo mixture and parsley over the top.
