ITALIAN STYLE POTATO SALAD
PREP TIME: 5 MINS
COOKING TIME: 5-7 MINS
2 x 350g packs Spud Lite Microwave potatoes
½ red onion, finely diced
1/3 cup flat-leaf parsley, roughly chopped
2 tablespoons red wine vinegar
2 tablespoons extra virgin olive oil
Juice of ½ lemon
1 teaspoon Dijon mustard
1 clove garlic, crushed
Salt flakes and freshly ground black pepper
1. Cook potatoes in microwave following pack instructions.
2. For the vinaigrette, combine all the ingredients together in a screw-top jar, shaking well to combine. To serve, halve hot cooked potatoes and place in a mixing bowl with half the dressing, tossing to combine. Allow standing for 10 minutes to allow hot potatoes to soak up the dressing
3. To serve, add remaining dressing, onion and parsley, tossing to combine.
4. Serve salad with barbecued meats.
