SMASHED LOADED BABY POTATOES

COOKING TIME: 30 MINUTES

INGREDIENTS
350g pack Spud Lite microwave potatoes
¼ cup (60ml) olive oil
50g bacon, diced
1 cup baby spinach
1 tablespoon grated cheddar
1 spring onion, thinly sliced
Salt flakes and freshly ground black pepper
METHOD
1. Preheat oven to 240ºC (220ºC fan-forced) and line a small baking tray with baking paper.
2. Cook Spud Lite microwave potatoes following pack instructions.
3. Place cooked potatoes on prepared baking tray and gently squash with a fork. Drizzle with olive oil. Bake in preheated oven for 25 minutes. Sprinkle cheddar over crispy potatoes for final 2 minutes of cooking.
4. Meanwhile, heat remaining olive oil in a non-stick frying pan over a medium heat. Add bacon and cook for 3 minutes before adding spinach. Stir occasionally until wilted and season with salt and pepper. Add spring onions and mix to combine.
5. To serve, top potatoes with the bacon mixture.
