PARMESAN GARLIC AND HERB ROAST POTATOES

PREP TIME: 10 MINS 

COOKING TIME: 30 MINS

SERVES: 4 – 6

INGREDIENTS

750g Spud Lite baby potatoes, halved

2 tablespoons olive oil
2 cloves garlic, crushed
1 tablespoon oregano leaves, chopped
1 tablespoon thyme leaves
2 teaspoon rosemary leaves, chopped
Salt flakes and freshly ground black pepper
1/3 cup finely grated parmesan
1 teaspoon finely grated lemon zest
1 tablespoon flat leaf parsley, roughly chopped

METHOD

1. Preheat oven to 200
C (180C fan-forced) and line a baking tray with baking paper.

2. Place prepared potatoes in a large mixing bowl together with oil, garlic, oregano, thyme, rosemary, salt and pepper, tossing until evenly coated.

3. Place potatoes on prepared baking tray and sprinkle with half the parmesan. Place in preheated oven for 15 minutes before turning, sprinkling with remaining parmesan and cooking for a further 15 minutes.

4. Remove roast potatoes from oven and sprinkle over zest and parsley, tossing to combine before serving.
