BLT POTATO & AVOCADO SALAD
PREP TIME: 15 MINS
COOKING TIME: 10 MINS
SERVES: 6 – 8 AS A SIDE
750g baby Spud Lite potatoes, quartered
1 teaspoon olive oil
250g smoked bacon, roughly chopped
1 baby cos lettuce, chopped
1 avocado, coarsely diced
1 punnet cherry tomatoes, quartered
¼ cup whole egg mayonnaise
1 clove garlic, crushed
salt flakes and freshly ground black pepper
1. Place prepared potatoes in a large saucepan covered with cold water over a medium heat. Slowly bring to the boil and cook for 5 minutes or until tender. Drain and allow to cool for 10 minutes.
2. Heat oil in a non-stick frying pan over a medium heat. Add bacon, stirring to combine and cook for 5 minutes or until golden and crispy.
3. Place warm potatoes in a large mixing bowl with aioli, tossing until well coated.
4. Add remaining ingredients, tossing gently to combine.
