SPICY WEDGES

PREP TIME: 10 MINUTES

COOKING TIME: 15 MINUTES

SERVES: 2

INGREDIENTS

 

2 large Spud Lite potatoes

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt flakes and freshly ground black pepper

2 tablespoons grated parmesan

TO SERVE

2 teaspoons flat leaf parsley, chopped

1 tablespoon sour cream

1/4 cup tomato salsa

METHOD

 1. Preheat air fryer at 200ºC for 10 minutes.

2. Cut potatoes in half and then cut each half into quarters.

3. Place oil, paprika, garlic and onion powders, salt and pepper together in a large mixing bowl. Add potato wedges, tossing until well coated, then sprinkle with parmesan.

4. Place half the wedges in preheated air fryer skin side down and cook for 15 minutes. Repeat process with remaining wedges.

5. To serve, place wedges on a serving platter with a small bowl of salsa. Drizzle with sour cream and garnish with parsley.
