BOXTY
(IRISH POTATO PANCAKES)

COOKING TIME: 20 MINUTES
SERVES: 4
INGREDIENTS
1 cup grated Spud Lite potato
1 cup mashed Spud Lite potato
1 cup plain flour
1 teaspoon baking powder
1/2 teaspoon salt
1 jumbo egg, lightly beaten
1 cup (250ml) buttermilk
60g unsalted butter
TO SERVE
Streaky bacon and maple syrup
Butter and honey
METHOD
1. Finely grate potato and wrap in a clean tea towel, squeezing out as much liquid as possible, before placing in a large mixing bowl.
2. Add mashed potato, flour, baking powder, salt, egg and buttermilk, stirring until batter is well combined.
3. Melt some of the butter in a large non-stick frying pan over a medium heat until it starts bubbling. Using 1/3 cup measure, place batter in batches in pan and cook for 4-5 minutes each side or until golden. Repeat process with remaining batter until 8 pancakes have been cooked.
4. Serve boxty with crispy streaky bacon and maple syrup.
