GREEK LEMON POTATOES
PREP TIME: 10 MINUTES
COOKING TIME: 45 MINUTES
SERVES: 6
INGREDIENTS
1 kg Spud Lite potatoes, cut into wedges
1/2 cup chicken stock
1/2 cup lemon juice
1/2 cup olive oil
5 cloves garlic, crushed
Salt flakes and freshly ground black pepper
1 tablespoon fresh oregano
Sliced lemon, to serve
METHOD
1. Preheat oven to 200ºC (180ºC fan-forced)
2. Place potatoes in a large roasting pan. In a large jug combine stock, juice, oil, garlic, salt and pepper, whisking to combine. Pour over potatoes, tossing until well coated.
3. Place in preheated oven and cook for 30 minutes, before turning potatoes and cooking for a further 30 minutes. Turn potatoes to sit on their skins and roast for a final 15 minutes.
4. To serve, place potatoes on a platter with slices of lemon, fresh oregano and an extra grind of black pepper.
