Air-fried Duck Roasted Potatoes with Sea Salt
PREP TIME: 10 MINUTES
COOKING TIME: 35 MINUTES
SERVES: 2-4
INGREDIENTS
500g Spud Lite potato
1 cup mashed Spud Lite potatoes, peeled
1 tablespoon rice flour
1 tablespoon duck fat
Salt flakes and freshly ground
black pepper
METHOD
1. Preheat air fryer at 200°C for 10 minutes.
2. Place potatoes in a medium saucepan covered in cold water and bring to the boil. Cook for 4 minutes or until edges are tender. Drain and return potatoes to hot pan. Place a lid on top securely and shake vigorously to fluff up the edges.
3. Place duck fat in a small saucepan and heat until smoking. Remove from heat.
4. Add flour, salt and pepper to the potatoes, shake until well coated. Add hot fat and toss gently to coat.
5. Place half the potatoes into the basket of preheated air fryer and cook for 25 minutes until super crispy, shaking potatoes half way through cooking.
