Muesli Biscuits

INGREDIENTS

2/3 cup mashed Spud Lite potato

115g unsalted butter, melted

1 teaspoon vanilla

2 teaspoons ground cinnamon

2 teaspoons mixed spice

2 cups oats

2 cups plain flour

2 teaspoons bicarb soda

1 tablespoon sunflower seeds

1 tablespoon pumpkin seeds

1 tablespoon poppy seeds

1 tablespoon sesame seeds

½ cup dried mixed berries

½ cup slivered almonds

METHOD

1. Preheat oven to 180°C (160°C fan-forced). Line 2 baking trays with baking paper.

2. In a large mixing bowl, mix together mashed potato, melted butter, vanilla, cinnamon and mixed spice, stirring to combine.

3. Add oats, flour, bicarb, seeds, dried mixed berries and almonds, stirring until well combined.

4. Using a tablespoon as a measure, roll heaped spoonfuls of mixture into balls and place on prepared baking trays, pressing down gently to flatten.

5. Bake in preheated oven for 15 minutes or until slightly golden brown on the edges. Remove from oven and cool on a wire rack.
