WALDORF POTATO SALAD

PREP TIME: 15 MINS

COOKING TIME: 10 MINS

SERVES: 4-6

INGREDIENTS

 

750g Spud Lite baby potatoes, quartered

1 Granny Smith apple, sliced

Juice of ½ lemon

2 celery sticks, diced

1/3 cup walnuts, toasted

1 cup celery leaves, roughly chopped

1 cup red grapes, halve

 

GREEK YOGURT & HONEY DIJON DRESSING

 

½ cup Greek style yogurt

½ cup whole egg mayonnaise

1 tablespoon Honey Dijon mustard

1 tablespoon parsley, chopped

Salt flakes and freshly ground black pepper

METHOD

 

Step 1
For the dressing, combine ingredients together in a small bowl, stirring to combine. Set aside until required.

Step 2
Place potatoes in a medium saucepan covered in water over a medium heat. Bring to boil and cook for 8 minutes or until tender. Drain and place hot potatoes in a mixing bowl with ½  the dressing, tossing to combine. Set aside and allow to cool.

Step 3
Place sliced apple in a bowl and squeeze over lemon, tossing gently to coat. 

To Serve
Add celery, walnuts celery leaves, grapes, prepared apple and remaining dressing, tossing gently combine.
