PERFECT SPUD LITE ROAST POTATOES
PREP TIME: 10 MINUTES
COOKING TIME: 50 MINUTES
SERVES: 4 – 6
INGREDIENTS
1kg Spud Lite potatoes, peeled and quartered
2 tablespoons olive oil
Salt and pepper
METHOD
1. Preheat oven to 220°C (200°C fan-forced) and line a large baking tray with baking paper.
3. Steam potatoes for 10 minutes or until edges are tender. Drain saucepan and return potatoes to the pan and cover with a lid. Shake vigorously to fluff up the edges of the potatoes. Add olive oil and season with salt and pepper. Shake again until well coated.
3. Place potatoes on prepared baking tray in preheated oven for 50 minutes or until golden, turning half way through.
