SMASHED PARMESAN POTATOES WITH TRUFFLE AIOLI

INGREDIENTS
350g bag Spud Lite micro potatoes
Olive oil spray
2 tablespoons grated parmesan
¼ cup Roasted garlic aioli*
2 teaspoons Truffle Paste**
METHOD
Step 1
Cook potatoes in microwave for 7 minutes, following pack instructions.
Step 2
Preheat air fryer to 200°C for 5 minutes.
Step 3
Crush microwaved potatoes with back of a wooden spoon to gently crush. Spray with oil and dip in parmesan on both sides. Spray air fryer basket with oil before placing prepared potatoes across base. Cook for 20 minutes until crispy and golden.
Step 4
Meanwhile, combine aioli and truffle paste together in a small mixing bowl, stirring until well combined.
Serve smashed potatoes and aioli with a chargrilled steak, and steamed greens.
NOTE*
We used Red Rock Deli Chef Series Creamy Roasted Garlic Aioli.
We used Jimmy Tartufi Truffle Paste from Coles.
