RASPBERRY, COCONUT & CHOCOLATE TRUFFLES

INGREDIENTS
400g Spud Lite potato, peeled and cut into chunks
27g Dollar Sweets freeze dried raspberry powder & crumb*
1/2 cup shredded coconut
200g cups white chocolate, melted
200g dark chocolate, melted
METHOD
Step 1
Place potato in a small saucepan covered in water over a medium heat. Bring to the boil and cook for 10 minutes or until tender and soft. Drain and mash potato using a ricer or masher until smooth. Return mash to saucepan and place over a medium-low heat, stirring continuously, to remove any excess moisture. Allow to cool for 5 minutes.
Step 2
In a medium mixing bowl, place 1 cup mashed potato, dehydrated raspberry powder, 1 tablespoon dehydrated raspberry crumb and 1/3 cup coconut together, stirring until well combined. Add melted white chocolate, stirring quickly to combine, then place in refrigerator to chill for 20 minutes.
Step 3
Use a tablespoon as a measure, rolling mixture into balls and placing on a tray lined in baking paper. Using a fork, dip each ball in dark melted chocolate and sprinkle with remaining coconut and dehydrated raspberry crumb. Place in refrigerator to chill for 1 hour or until chocolate has set completely.
