CREAMY PLANT BASED MASH POTATO
PREP TIME: 10 MINUTES
COOKING TIME: 20 MINUTES
SERVES: 4
INGREDIENTS
1kg Spud Lite potatoes Peeled & quartered
¼ cup Olive Oil
2 Cloves Garlic Crushed
½ cup (125ml) Almond milk
1 Tablespoons Chives
Chopped Salt flakes & freshly ground Pepper
METHOD
1. Steam potatoes for 15 minutes or until very tender. Remove from heat and mash until smooth.
2. Meanwhile heat oil in a small frying pan over a low heat. Add garlic and cook gently for 2 minutes. Remove from heat and allow to cool.
3. Add cooked garlic and oil, milk, chives, salt and pepper, to the mash potato stirring until mash is smooth and well combined.
