POTATAS BRAVAS

INGREDIENTS

750g Spud Lite Baby potatoes, quartered
¼ cup olive oil
1 brown onion, diced
2 cloves garlic, crushed
1 teaspoon smoked paprika
400g tin chopped tomatoes
1 tablespoon sherry vinegar
Salt flakes and freshly ground pepper
¼ cup aioli, for drizzling
1 tablespoon flat leaf parsley leaves, finely chopped 

METHOD

1. Preheat oven to 200°C (180°C fan-forced). 

2. Place potatoes in a large roasting pan with 1 teaspoon olive oil, tossing to combine. Place in preheated oven and roast for 45 minutes or until golden crispy. Remove from oven and season with salt flakes. 

3. Meanwhile for the sauce, heat remaining oil in a large non-stick saucepan over a low heat. Add onion, garlic and smoked paprika, cover and cook for 10 minutes or until onion is soft. Add tomatoes, vinegar and salt and bring to a boil. Reduce heat to a gentle simmer & cook for 15 minutes or until mixture reduces and becomes thick. 

To Serve
Spread some of the tomato sauce over a platter or serving dish and pile the roasted potatoes on top with extra tomato sauce. Drizzle with aioli and garnish with parsley.
