Bacon, Rosemary & Balsamic Vinegar Roast Potatoes
PREP TIME: 15 MINUTES
COOKING TIME: 35 MINUTES
SERVES: 4
INGREDIENTS
750g Spud Lite baby potatoes, quartered
3 pink shallots, peeled and quartered
2 teaspoons olive oil
100g smoked bacon, diced
1 sprig rosemary, leaves
removed and chopped
1 tablespoon balsamic vinegar
sea salt and freshly ground black pepper
METHOD
1. Preheat air fryer to 200°C for 10 minutes.
2. Place prepared potatoes in a mixing bowl and drizzle over oil, tossing to combine. Place potatoes in basket of preheated air fryer and cook for 25 minutes. Adding prepared shallots to the potatoes halfway through cooking, tossing to combine.
3. Sprinkle diced bacon and chopped rosemary over the roasted potato mixture and cook for a further 10 minutes.
To Serve
Spoon place potatoes on a serving dish drizzled with balsamic vinegar and season with salt and pepper.
