CARAMELISED HONEY MUSTARD ROAST POTATOES
PREP TIME: 15 MINS
COOKING TIME: 1 HR
SERVES: 4-6
INGREDIENTS
1 kg Spud Lite potatoes, cut into large chunks
1 tablespoon olive oil
2 large brown onion, peeled and cut into wedges
2 tablespoons grainy mustard
1 tablespoon honey
1 tablespoon flat leaf parsley, roughly chopped
1 tablespoon dill, roughly chopped
Salt flakes and freshly ground black pepper
METHOD
Step 1
Preheat oven to 220°C (200°C fan-forced). Line 2 x baking trays with baking paper.
Step 2
Place potatoes in pot covered in cold water over medium-high heat and bring to boil. Cook for 5 minutes. Drain.
Step 3
Place potatoes on prepared baking tray and drizzle over 2 teaspoons olive oil, tossing gently until well coated. Roast in preheated oven for 55 minutes, turning occasionally.
Step 4
Place onions on remaining prepared baking tray and drizzle over remaining olive oil, tossing gently to coat. Place in oven with potatoes for final 40 minutes, swapping shelves as required so onions caramelise.
Step 5
In a large mixing bowl combine mustard, honey, parsley, dill, salt and pepper, stirring to combine.
To serve, add roasted potatoes and onions to honey mustard mixture, tossing gently until well coated and serve immediately.
