GOCHUJANG PARMESAN ROAST POTATOES

COOKING TIME: 40 MINS
SERVES: 4
INGREDIENTS
750g Spud Lite baby potatoes, halved
¼ cup Gochujang paste (Korean chilli paste)
2 teaspoons garlic powder
2 spring onions, finely chopped
2 teaspoons vegetable oil
1/3 cup grated parmesan
Olive oil spray oil
METHOD
Step 1
Preheat oven to 200°C (180°C fan-forced).
Step 2
Place potatoes in a medium saucepan over medium heat and bring to boil. Cook for 5 minutes or until just tender. Drain and allow to cool for 10 minutes.
Step 3
In a large mixing bowl, combine gochujang, garlic, 2/3 spring onion and vegetable oil, mixing to combine. Add potatoes, tossing until coated in mixture.
Step 4
Spray the base of a medium oven dish and sprinkle over half the parmesan. Place potatoes cut side down on top of parmesan and sprinkle remaining parmesan over the top.
Step 5
Place dish in preheated oven and bake for 30 minutes or until parmesan is golden and becomes a crunchy crust.
To Serve
sprinkle over remaining spring onions.
