Kimchi, Sesame & Cheddar Mash

INGREDIENTS

 

1kg Spud Lite Potatoes

1 teaspoon olive oil

2/3 cup kimchi, finely chopped

1/2 cup (125ml) Kewpie sesame mayonnaise

1 tablespoon roasted sesame oil

1 cup cheddar, grated

1 teaspoon soy sauce

2 spring onions, finely sliced

1 tablespoon sesame seeds, toasted

METHOD

 

Step 1
Boil potatoes for 15 minutes or until very tender. Drain.

Step 2
Using a potato masher or ricer, mash potatoes in pan until smooth. Return pan to a medium heat, stirring constantly for 1-2 minutes, to help remove excess moisture from the mashed potato.

Step 3
Heat olive oil in a non-stick frying pan over a medium heat. Add kimchi and sauté for 3 minutes. Remove from heat, setting aside 2 tablespoons of kimchi to garnish.

Step 4
Add mayonnaise and ó the sesame oil to mashed potatoes with the cheddar, kimchi, soy sauce and 1/2 spring onion, stirring until well combined.

Step 5
Serve mash topped with remaining kimchi, spring onions and sesame oil, finishing with toasted sesame seeds. This mash is great served with grilled fish, pork or chicken.
