INDIAN STYLE POTATO AND PEA FRITTERS

INGREDIENTS
1 teaspoon olive oil
1 clove garlic, crushed
2 tsp. ginger, finely grated
1 long green chilli, deseeded
2 teaspoons Curry powder
600g Spud Lite potatoes,
finely grated, rinsed and squeezed
1 cup frozen peas, thawed
2 spring onions, finely sliced
100g paneer cheese, finely grated
1/4 cup coriander
1/2 cup wholemeal self-raising flour
2 extra-large eggs, lightly beaten
salt flakes and freshly ground black pepper
1/4 cup olive oil
TO SERVE
Coriander leaves
Tzatziki
Fruit chutney
METHOD
1. Heat olive oil in a small non-stick frying pan over a medium heat. Add garlic, ginger, chilli and curry powder and cook for 2 minutes until aromatic. Remove from heat.
2. In a large mixing bowl, combine grated potato, peas, spring onions, garlic mixture, Paneer, coriander, flour, eggs, salt and pepper, stirring until combined.
3. Heat 1 tablespoon olive oil in a large non-stick frying pan, over a medium heat. Add . cups of potato mixture in batches and cook for 4 minutes on each side or until golden and cooked through. Add extra oil, as required.
To Serve
Serve fritters with tzatziki, chutney and extra coriander.
