SUPER TASTY MASH POTATO

PREP TIME: 10 MINUTES

COOKING TIME: 20 MINUTES

SERVES: 6

INGREDIENTS

1.5 kg Spud Lite potato, peeled and diced

2 cloves of garlic, gently squashed

3 sprigs thyme

2 litres chicken stock

100g unsalted butter

Salt flakes and freshly ground black pepper

METHOD

1. Place potatoes, garlic and thyme in a large saucepan covered with chicken stock over a medium heat. Bring to the boil and cook for 20 minutes or until potatoes are soft. Drain potatoes, removing garlic and thyme and reserving stock. Return potatoes to the saucepan.

2. Using a potato masher or ricer, mash potatoes until smooth. Return pan to a medium heat, stirring constantly for 1-2 minutes, to help potato dry out. Add butter and 1 cup reserved stock stirring until mixture is super smooth. Season with salt and pepper.
